Fresh Garden Bruschetta

A great and easy way to use extra tomatoes – you can easily double the recipe for more people. Watch out, this disappears fast!

1 Loaf of Ciabatta Bread (or your favorite bread), sliced into ¼ inch slices.
2 Cups of tomatoes, diced into small cubes (½ – ¼ inch)
1/2 C. of your favorite freshly chopped herbs like Basil, Oregano and Parsley or 2 Tbsp. Italian Seasoning
2 Tbsp. of finely minced garlic or 4 tsp. Garlic Powder
1/8 c.
1/3 c. Olive Oil
8 oz. mozzarella diced into small cubes (½ – ¼ inch)
Butter

In a large bowl combine Tomatoes, Herb mixture/Italian seasoning, half of garlic and olive oil. Refrigerate for at least an hour (can be made in advance up to 24 hours)

Heat oven to broil.

Arrange sliced of bread on a baking sheet covered in foil. Butter slices, sprinkle with remaining half of remaining half of garlic.

Broil for 2 minutes, turn each slice, butter, sprinkle with remaining garlic, broil an additional 2 minutes.

Top each slice with cheese, then a large spoonfull of tomato mixture. Broil an additional 4 to 5 minutes or until the cheese begins to melt and turns golden.
